Homemade Funfetti Cake

It was my husband’s birthday over the weekend. He and I have totally different tastes when it comes to desserts, but since it was his birthday, I wanted to make him exactly what he wanted. And that meant one thing – Funfetti. I don’t have anything against boxed cake mixes. In fact, I have great recipes that begin with a box. But, since it was his birthday, I wanted to come up with a homemade version. After all, Funfetti is basically just a sweet white cake with sprinkles. I ended up with a tender, white cake that was dotted with sprinkles, and it only took about 5 extra minutes to make! I topped it with my whipped buttercream frosting and, of course, more sprinkles. It was borderline too sweet for me (the mix is, too!), but my husband (and my son) loved it. So, if you have a Funfetti lover at your house, give the homemade version a try, and you may never buy the boxed kind again.

Homemade Funfetti Cake

Ingredients

3 ½ c. sifted cake flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 c. butter, melted and cooled slightly
1 ½ c. granulated sugar
2 large eggs
1/2 c. plain non-fat Greek yogurt
3/4 c. milk (low-fat is ok)
2 T. vanilla extract
3/4-1 c. sprinkles, depending on how sprinkletastic you like it, plus extra for decorating

Directions

  1. Preheat oven to 350 F. Grease and flour 2 9-inch round cake pans.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, stir together melted butter and sugar.
  4. Stir in eggs, yogurt, milk, and vanilla extract until well-combined.
  5. Add flour mixture and stir until incorporated.
  6. Stir in sprinkles until just combined. The sprinkles will break and bleed if you overmix them.
  7. Divide the batter between prepared cake pans.
  8. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the cakes cool in pans for 5 minutes.
  10. Remove cakes from pans; let them finish cooling on wire racks.
