{Dark or White} Chocolate Macadamia Nut Cookies

He loves white chocolate, and I’m a dark chocolate kinda girl. But one thing that we do agree on is that we both love macadamia nut cookies. And, really, what’s not to love? These cookies are soft and buttery and delicious.

{Dark or White} Chocolate Macadamia Nut Cookies

Ingredients

1 c. (16 T.) butter, at room temperature
1 c. brown sugar
1/3 c. granulated sugar
2 large eggs
1 T. vanilla extract
3 c. all-purpose flour
1 T. cornstarch
1 ½ tsp. baking soda
1 tsp. kosher salt
2/3 c. macadamia nuts, roughly chopped
1/2-1 c. dark or white chocolate chips

Directions

  1. 1. Line cookie sheet with a silicone baking mat or parchment paper.
  2. 2. In the bowl of a stand mixer fitted with the paddle attachment, beat together the butter and sugars until fluffy well-combined, about 3-4 minutes.
  3. 3. Beat in eggs one at a times, scraping down the sides as needed.
  4. 4. Stir in vanilla until incorporated.
  5. 5. In a separate medium bowl, whisk together the flour, cornstarch, baking soda, and salt.
  6. 6. Stir in flour mixture until just incorporated.
  7. 7. Stir in nut and chocolate chips.
  8. 8. Cover, and refrigerate dough at least 1 hour (up to 24 hours).
  9. 9. Toward the end of the chilling time, preheat oven to 350 F.
  10. 10. Drop scoops of dough (1.5 tablespoons each) onto prepared cookie.
  11. 11. Bake for 8-9 minutes, or until edges are just beginning to turn light brown.
  12. 12. Remove, and let cool for 5-10 minutes on the cookie sheet.
  13. 13. Transfer to wire rack to finish cooling.

      Hi! T= tablespoon, tsp. = teaspoon, and c.= cup. 1 c = 236.588 ml. Hope that helps!! =)
