Did you see the wave of dirty drinks this summer? There is a little shop in Utah that started adding coconut to Diet Coke and Dr Pepper and called them “dirty” drinks. I’m not sure why adding coconut to something makes it dirty; I think it makes it delicious! Anyway, since I love Dr Pepper cake, I thought I’d throw a little coconut in. Turns out, it’s a fantastic combo!
One note – if you’ve never toasted coconut, it’s really easy to do. Just toss the coconut on a rimmed sheet pan, and pop it in the (350 F) oven. You’ll need to keep an eye on it and stir it once or twice to keep the edges from burning. It usually takes about 5-8 minutes to toast (it varies a little depending on how much coconut I’m toasting). And if you’ve never tried toasted coconut, it’s awesome! It gets caramel-y and a little crunchy and just plain delicious.
