A few weeks ago, we were fortunate to be able to go visit my parents. My mom has always been an amazing cook, and I love her making the same foods that I enjoyed as a kid for my kids.
One of my favorites is this Buttered Parsley Potato Recipe. There’s not much to it – just 4 simple ingredients. But they are so crazy good! Plus, they’re ready in about 15 minutes, so they’re a great side dish option for busy weeknights.

Buttered Parsley Potato Recipe
Buttered parsley potatoes
- 1 1/2 lbs . gold creamer potatoes*
- 1/4 c . butter
- 1/4-1/2 tsp . kosher salt depending on taste preference
- 1/4 c . parsley
Bring a large pot of water to boil.
Add potatoes, and boil for 15 minutes.
Drain potatoes and return to pot.
Add butter and salt to pot, and toss to coat potatoes in butter.
Chop parsley, and sprinkle over potatoes. Toss to combine, if desired.
*I like The Little Potato Company's creamer potatoes.
