Cranberry Spinach Quinoa Salad

Cranberry Spinach Quinoa Salad Let’s talk salads. For a long (long) time, I wasn’t a big fan. I rarely ordered or made salads because for me, “salad” was synonymous with some wilted lettuce and a few sad vegetables. And it’s hard to get excited about that. I’m not sure whether I wasn’t looking hard enough for good salads (probably the case) or whether there’s just more variety now. Either way, I’m in love with salads these days. I especially love “grain” salads with ingredients like wheat berries, bulgur, and quinoa–like this Cranberry Spinach Quinoa Salad. This salad is super tasty and so easy to make! It takes about five minute to put together once the quinoa is made. If you have leftover quinoa, this is the perfect way to use it up. I usually make a batch when I have a little extra time and then leave it in the fridge to use in an upcoming recipe. If you choose to do that, just warm it up before using it in this recipe. It’s also full of really simple, tasty ingredients, and I love the variety of textures and flavors in this recipe.

 

I’m a texture person, and I also really like contrasting flavors (like sweet and savory) in my dishes. So, I love the mix of sweet dried cranberries and apples, salty pecans, and creamy/tangy goat cheese. I also went with a sweet-ish dressing on this salad–Marzetti® Simply Dressed® Pomegranate Dressing. It’s made of a few simple ingredients and has a light sweetness and a delicious pomegranate tang to it. So, it’s not too heavy or overly sweet. It’s just a great mix of sweet and tangy, and it really complements the goat cheese and the spinach leaves nicely. Plus, this salad is so easy to adjust to your tastes. Don’t like pecans? Just use walnuts instead (or leave them out if you’re allergic). Not a fan of spinach? Mixed greens work really well, too. We ate this as a light lunch, but if you’d like a more substantial salad, just add in some leftover cooked chicken. No matter which way you go, this salad is delicious!

Cranberry Spinach Quinoa Salad

Ingredients

  • 1 c . cooked quinoa
  • 1 1/2 c . fresh baby spinach leaves
  • 1 c . thinly sliced apples
  • 1/3 c . dried cranberries
  • 1/4 c . chopped pecans
  • 2 T . crumbled goat cheese
  • Marzetti® Simply Dressed® Pomegranate Dressing

Instructions

  1. Layer half of the quinoa and half of the spinach in a large dish.
  2. Top with the remaining quinoa and spinach leaves.
  3. Layer apples over quinoa and spinach.
  4. Top with cranberries, pecans, and goat cheese.
  5. Serve drizzled with dressing.

    I would marinate chicken using the Marzetti ginger sesame simply dressed salad dressing to make a Asian chicken wrap with bell peppers and broccoli slaw. I would then use the dressing as a dip for the wrap.

    well I was going to say salad but my kids WONT eat salad so I would use it for a chicken nugget dip recipe… (mixed with a little bit of ketchup)

    I am going to use the Marzetti Ranch dressing in my Cold Chicken Pasta salad that I make! It is the best tasting dressing in this salad and my family loves it!
