Ingredients and substitutions
- Yellow cake mix – A similar cake mix, like white or butter, will also work.
- Ingredients to make the cake – different box cake mixes call for different ingredients, like water, oil, and egg, to make the batter. Just follow the directions on the box.
- Instant vanilla pudding
- Eggnog – Feel free to use whatever type of eggnog you prefer.
- Cool whip – You can also use homemade whipped cream. If using homemade whipped cream, you’ll need about 1 1/2-2 cups of prepared whipped cream. Homemade whipped cream won’t hold up as well as cool whip, so you’ll need to use the cake quickly.
- Ground cinnamon
- Ground nutmeg

How to make eggnog poke cake
Preheat oven to 350°F. Grease a 9×13-inch pan with nonstick cooking spray.

Prepare the cake batter according to the directions on the box in a large mixing bowl.

Pour the batter into the prepared cake pan. Bake the cake according to the box instructions for a 9×13 baking pan.
Remove the cake from the oven. Using the end of a wooden spoon, poke holes all over the warm cake.

In a medium mixing bowl, combine the pudding mix (powder) and eggnog. Whisk together until well-combined.

Immediately pour the pudding all over the cake, allowing it to fill up the holes. Place the cake into the fridge for an hour. This will help the pudding to set up.

Using a rubber spatula, spread the cool whip over the top of the cake.

Sprinkle the cinnamon and nutmeg over the top.

Cant wait to make this. I love eggnog recipes. Since some eggnogs very in consistency, if it’s too thick to spread out, can we add milk or more eggnog?

I would use more eggnog because I’d worry that milk might take away from the eggnog flavor. Hope you like it!

It was perfect. Vanilla pudding and eggnog was so tasty. I did have to add more eggnog since it was the thick kind. Sad part of making this is now having to wait for eggnog season again (Nov/Dec). Recipe is printed & put in my recipe folder haha.
