Fries Five Ways

Two of the biggest challenges for me, food-wise, are trying to come up with quick and easy meals that my kids will eat and trying to figure out what to do to make leftovers more exciting.

So, I came up with five dinner ideas that are all ready in about 30 minutes using French fries from Alexia Foods. My kids, like most kids, love anything with fries. We’re especially fond of sweet potato fries, so they’re an easy way to create a delicious meal by just adding a little extra to them.

These meal ideas are all quick (about 30 minutes or less for each one), and several use leftover ingredients. Feel free to make substitutions (i.e. chicken for turkey, ground turkey for ground beef, etc.) based on what you have on hand. And all of them pair well with a simple side salad.

Thanksgiving Poutine

These fries taste like Thanksgiving in fry-form.

Ingredients

1 bag Alexia Sweet Potato French Fries with Sea Salt

1 c. cooked shredded turkey

1/2 c. cheddar cheese curds (or cubes)

1/2 c. turkey gravy

Cranberry sauce

Directions

Prepare fries according to package directions.

When fries are finished, remove to a shallow dish.

Top with turkey, cheese curds or cubes, and return to oven for 3-5 minutes, or until melted.

Top with gravy, and serve with cranberry sauce.

Hot Brown Fries

These fries are a take on the classic hot brown sandwich.

Ingredients

1 bag Alexia 98% Fat Free Smart Classic Straight Cut Fries

2 c. milk

1/4 c.all-purpose flour or cornstarch

8 oz. white cheddar cheese, in small cubes

Salt and pepper to taste

1 c. cooked, shredded turkey

2 strips cooked bacon, crumbled

1/2 c. diced cherry tomatoes

Directions

Cook fries according to package directions.

Meanwhile, in a saucepan, whisk together milk and flour or cornstarch.

Cook until thickened, stirring regularly.

Remove from heat, and stir in cheese cubes until melted.

Season with salt and pepper.

When fries are finished cooking, remove to shallow baking dish.

Top fries with turkey, crumbled bacon, tomatoes, and then cheese sauce.

Return to oven for 3-5 minutes.

Taco Fries

My take on a taco in fry form.

Ingredients

1 bag Alexia Sweet Potato Fries with Sea Salt

1/2 lb. lean ground beef

1/2 packet taco seasoning

2 T. water

1 orange, red, or yellow bell pepper, seeded and diced

1 c. canned corn

1 c. shredded Mexican cheese blend

4-5 cherry tomatoes, quartered

Cilantro, sour cream, guacamole

Directions

Prepare fries according to package directions.

Meanwhile, brown ground beef in a skillet.

Drain fat, and add taco seasoning and water.

When fries are finished baking, remove to a shallow baking dish.

Top with ground beef, bell pepper, corn, and cheese.

Return to oven for 3-5 minutes, or until cheese has melted.

Top with tomatoes and cilantro.

Serve with sour cream and guacamole if desired.

Bacon Buffalo Chicken Fries

You can make these fries as mild or as spicy as you’d like by adding more (or less) Buffalo wing sauce.

Ingredients

Alexia Sweet Potato Fries with Sea Salt

1 c. shredded cooked chicken

Buffalo wing sauce (I used 3 T.)

2 cooked strips bacon, crumbled

1 c. shredded Colby Jack cheese

Bleu cheese, ranch dressing, cilantro

Directions

Cook fries according to package directions.

Meanwhile toss together chicken and sauce.

When fries are finished baking, remove to shallow baking dish.

Top with chicken, bacon, and cheese.

Return to oven, and cook to 3-5 minutes, or until cheese has melted.

Top fries with bleu cheese, ranch, and cilantro.

Greek Fries

These fries were inspired by Greek salads.

Ingredients

1 bag Alexia 98% Fat Free Smart Classic Straight Cut Fries

1 c. cooked, shredded chicken

About 1/4 c. each diced cucumber, diced tomato, diced bell pepper, olives, feta, and tzatziki

Directions

Prepare fries according to package directions.

Remove to serving dish.

Top with chicken, cucumber, tomato, bell pepper, olives, and crumbled feta.

Serve with tzatziki.
