The waffles are soft and full of those classic gingerbread flavors like molasses, cinnamon, ginger, and cloves. The warm spices pair perfectly with a drizzle of maple syrup, a dollop of whipped cream, or a dusting of powdered sugar.

- Spices: Feel free to adjust the amount and type of spices according to your tastes.

- Brown sugar: Light brown sugar or dark brown sugar are ok.
- Molasses: I don’t recommend using blackstrap molasses as it can be bitter.
- Milk: Whole milk will give you richer waffles, but any type of milk, including nondairy milk, will work.

Step 1: In a large bowl combine your flour, salt, baking powder, baking soda, ground ginger,
cinnamon, cloves, allspice, and salt. Whisk until combined.
Step 1: In a separate bowl combine your oil, brown sugar, granulated sugar, eggs,
molasses, and milk. Whisk until just combined.

Step 3: Add your dry ingredients into the wet ingredients. Whisk until just combined, do not
overmix.
Step 4: Allow your batter to sit at room temperature for 5 minutes, while you preheat your
waffle iron.
Step 5: Ladle your waffle batter into your waffle maker and cook according to your machine
directions. Serve with whipped cream, butter, and syrup!

Recipe Tips!
- Freezing: The cooked waffles can be frozen. To freeze, wrap each cooked and cooled waffle in plastic wrap and place in a freezer-safe container. Freeze for up to 1 month.
- Serving suggestions: You can serve the waffles topped with butter and maple syrup, buttermilk syrup, whipped cream, cinnamon apples, and more!

Storage
Store any leftover waffles in an airtight container in the refrigerator. They will keep for 3-4 days when properly stored in the fridge.
