PB & J Sandwich Cookies

 It’s peanut butter jelly time! Then again, it’s always peanut butter jelly time at my house. So, I guess it was only a matter of time before two of my fav foods – pb&j sandwiches and cookies – ended up as pb&j sandwich cookies. These cookies are the peanut butter version of the chocolate mint Oreo cookies I shared on Monday. The peanut butter made these guys a little more fragile, so handle with care while they’re warm.

PB & J Sandwich Cookies

Ingredients

  • 1/2 c . (8 T.) butter, at room temperature
  • 1/2 c . creamy peanut butter
  • 1 c . brown sugar
  • 1/3 c . granulated sugar
  • 2 large eggs , at room temperature
  • 1 T . vanilla extract
  • 3 c . all-purpose flour
  • 1 T . cornstarch
  • 1 ½ tsp . baking soda
  • 1 tsp . kosher salt
  • Jelly

Instructions

  1. Line cookie sheet with a silicone baking mat or parchment paper.
  2. In the bowl of a stand mixer fitted with the paddle attachment, beat together the butter, peanut butter, and sugars until fluffy well-combined, about 3-4 minutes.
  3. Beat in eggs one at a times, scraping down the sides as needed.
  4. Stir in vanilla until incorporated.
  5. In a separate medium bowl, whisk together the flour, cornstarch, baking soda, and salt.
  6. Stir in flour mixture until just incorporated.
  7. Cover and refrigerate dough at least 3 hours (up to 24 hours).
  8. Toward the end of the chilling time, preheat oven to 350 F.
  9. Using a small cookie scoop, drop scoops of dough (1 tablespoons each) onto prepared cookie.
  10. Bake for 7-8 minutes, or until edges are just beginning to turn light brown.
  11. Remove, and let cool for 5-10 minutes on the cookie sheet.
  12. Transfer to wire rack to finish cooling.
  13. Once cookies have cooled to about room temperature, turn half of them flat side up.
  14. Top flat side with a little dollop of jelly (about 1 teaspoon, but you can use as much or as little as you like).
  15. Add other cookie to make a pb&j cookie sandwich.
