  • 2 ears fresh sweet corn
  • 1 jalepeño* finely diced
  • 1/4 cup finely chopped red onion
  • 1/4 cup cilantro chopped
  • 2 tablespoons fresh lime juice
  • 1 clove garlic finely minced
  • pinches Couple salt


  • Remove kernels from ears of corn.
  • In a medium bowl, toss together corn kernels, jalapeño, onion, cilantro, lime juice, garlic, and salt.
  • Refrigerate until ready to serve.


*Discard the seeds for milder salsa and include them for a spicier salsa.
