Ingredients

box UNCLE BEN'S® Flavored Grains Long Grain & Wild Original Recipe

cup
fresh spinach leaves
2
tablespoons
chopped sun-dried tomatoes
1
pound
boneless, skinless chicken breast
, in 1-inch chunks

ounce
can chicken broth
3
tablespoons
fresh lemon juice
1
teaspoon
dried oregano
3
cloves
garlic
, minced
Salt and pepper
, to taste
Instructions
Preheat oven to 350 F.
Lightly grease a baking dish (I used a 2.2 quart).
Add rice and seasoning packet to baking dish.
Top rice with spinach and sun-dried tomatoes.
Add chicken on top of spinach.
In a bowl, whisk together chicken broth, lemon juice, oregano, garlic, and salt and pepper.
Pour broth mixture around chicken.
Cover with aluminum foil, and bake for about 45-50 minutes.
Uncover, and continue to bake for another 5-10 minutes, or until rice has absorbed the desired amount of liquid.
