butter

brown sugar

large egg

light corn syrup

vanilla extract

old-fashioned oats

all-purpose flour

apple pie spice

baking soda

peeled
finely diced Granny Smith apple
Instructions
Preheat oven to 350 F. Line baking sheets with silicone baking mats or parchment paper. Set aside.
In a large bowl, beat butter and sugar together until well combined, about 3 minutes.
Scrape down bowl.
Add egg, corn syrup, and vanilla; beat until well-combined, about 1 minute.
Stir in oats, flour, spice, salt, and baking soda until incorporated.
Stir in apple.
Drop by medium cookie scoops (1.5 tablespoons) about 2 inches apart on prepared baking sheets.
Bake for about 10 minutes, or until set.
Let cool on baking sheet for 5 minutes.
Remove to wire cooling rack, and let cool to room temperature.
