tablespoons
olive oil

red potatoes
in small cubes
1
tablespoon
butter
1
medium zucchini
cut into 1/4-inch slices
1
clove
garlic
minced
1
teaspoon
no salt garlic herb seasoning
12
ounces
kielbasa
cut into 1/2-inch slices
Salt
pepper
Grated Parmesan cheese
optional
Instructions
In a large skillet, heat olive oil over medium high heat.
Add the cubed potatoes.
Cook, stirring regularly, for 10-15 minutes.
Remove from skillet.
Add the butter to the now-empty skillet.
Stir in zucchini and sauté until tender crisp.
Add garlic and seasoning, and stir in. Remove from skillet.
Add smoked sausage, and cook, stirring regularly, until heated through, about 3 minutes.
Return the potatoes and zucchini mixture to the skillet and stir in.
Season with salt and pepper.
Serve sprinkled with grated parmesan cheese, if using.
Notes
Red potatoes:
I used larger red potatoes. If using small red potatoes, you may want to add additional potatoes.
Butter
: I used salted butter. The butter adds additional flavor.
Zucchini
: There's no need to peel the zucchini before use.
Kielbasa:
Feel free to use any type of kielbasa that you like.
Parmesan cheese:
The parmesan cheese is optional.
