Instructions
Preheat oven to 350 degrees F. Line baking sheets with parchment paper. Set aside.
In the bowl of a stand mixer fitted with the paddle attachment, add brown sugar, butter, egg, and vanilla. Beat until well combined.
1 cup dark brown sugar,
¾ cup unsalted butter,
1 large egg,
2 teaspoon vanilla extract
Add flour, baking soda, cinnamon, ginger, and salt. Mix until just combined.
2 ¼ cups all purpose flour,
1 teaspoon baking soda,
½ teaspoon ground cinnamon,
¼ teaspoon ground ginger,
½ teaspoon kosher salt
Scoop dough into 1 ½ tablespoon-sized portions (medium cookie scoop) and roll into balls.
Pour sugar into a shallow bowl. Roll each dough ball into the sugar to coat all sides.
⅓ cup granulated sugar
Place on the prepared baking sheets, leaving about 2 inches between each one.
Bake for about 8-15 minutes or until lightly golden brown around the edges. The edges should be set with slightly underbaked middles.
Notes
Brown sugar:
You can use light brown sugar, but the cookies won't have as much brown sugar flavor.
Unsalted butter:
You can swap in salted butter for the unsalted butter. If using salted butter, decrease the salt to 1/4 teaspoon.
Spices:
Feel free to adjust the spices to your liking.
Salt:
Or use half the amount of table salt.
