Prepare the pie crust according to this recipe or place store bought pie crust in the bottom of an 8-inch deep-dish pie plate. Use your fingers to crimp the edges to style the pie. Use a fork to poke holes in the bottom of the crust to release any air bubbles.
1 pie crust
Using dried beans or pie weights on the bottom of the crust, parbake pie crust for 10-15 minutes. Let cool completely while you prepare the filling.
In a large bowl, whisk together the butter, sugars, and vanilla until well combined.
½ cup unsalted butter, ¾ cup light brown sugar, ¼ cup granulated sugar, ½ tablespoon vanilla extract
Stir in the eggs, one at a time, mixing well after each addition.
2 large eggs
Add flour, cocoa powder, and salt. Stir until just incorporated.
1 cup + 2 tablespoons all purpose flour, ½ cup unsweetened cocoa powder, ½ teaspoon kosher salt
Scoop the batter into the parbaked crust.
Bake for 20 minutes. Let cool before serving with a scoop of ice cream.
Notes
Pie crust: You can use a homemade butter pie crust or a store bought refrigerated pie crust for this recipe.
Butter: You can substitute salted butter for the unsalted butter. Simply reduce the salt to 1/4 teaspoon if using salted butter.
Cocoa powder: I use unsweetened cocoa powder in this recipe.
