Cheesy kielbasa pasta is an easy, cheesy pasta recipe. This simple recipe turns pantry staple ingredients like pasta and kielbasa into a quick weeknight dinner.
Add olive oil to a large skillet over medium heat.
1 tablespoon olive oil
Add the kielbasa and onion, and cook, stirring regularly, for 4 minutes, or until the sausage is lightly browned.
1 pound kielbasa sausage sliced, ½ cup diced onion
Stir in the garlic and Italian seasoning, and cook for 30 seconds, stirring the entire time.
2 cloves garlic minced, 1 teaspoon Italian seasoning
Add chicken broth, tomatoes, milk, pasta, and black pepper.
2 cups reduced-sodium chicken broth, 14 ounce can diced Italian tomatoes, ½ cup milk, 8 ounces uncooked penne or similar pasta, ½ teaspoon ground black pepper
Bring to a boil.
Once at a boil, lower the heat to medium-low. Cover and cook for 15 minutes, or until the pasta is al dente, stirring occasionally.
Remove from heat.
Add the cheese, and stir until melted and combined.
2 cup shredded Cheddar-Jack cheese
Season with additional salt and pepper to taste.
Notes
Kielbasa: Or a similar sausage, like turkey kielbasa.
Italian seasoning: Feel free to increase the amount of seasoning.
Chicken broth: I like to use reduced-sodium broth to better control the salt level.
Italian tomatoes: I like to use Italian tomatoes because of the extra seasoning in the tomatoes. Diced tomatoes will also work.
Milk: Any milk, from skim milk to whole milk will work.
