Instructions
Preheat the oven to 350F. Grease an 8x8-inch metal baking dish. Set aside.
For crumb topping, add the butter and brown sugar to a medium mixing bowl.
3 tablespoons butter,
⅓ cup brown sugar
Mix until combined.
Add the remaining crumb ingredients.
¾ cup oats,
¼ cup all-purpose flour,
½ teaspoon ground cinnamon,
2 tablespoons chopped pecans
Mix until well-combined. Set aside.
For cake, add the butter and sugar to a large mixing bowl.
½ cup butter,
⅔ cup brown sugar
Beat until well-combined, about 2-3 minutes on medium.
Add the banana, eggs, and vanilla.
1 cup mashed ripe banana,
2 large eggs,
1 teaspoon vanilla extract
Mix until well-combined.
Add the flour, salt, and baking soda.
1 ½ cups all-purpose flour,
1 teaspoon salt,
1 teaspoon baking soda
Stir just until combined. Don't overmix.
Add the nuts, and stir in, if using.
½ cup chopped pecans
Pour the cake batter into the prepared baking pan.
Sprinkle the crumb topping evenly over the cake batter.
Bake for 35-45 minutes, or until wooden pick comes out clean.
Let the cake cool for at least 10 minutes in the pan. Cake can be served warm or at room temperature.
Notes
Butter:
I use salted butter, but unsalted butter would also work.
Brown sugar:
I use light brown sugar.
Nuts:
Chopped walnuts could also be used.
Spices:
Feel free to add additional spices, like a pinch or two of nutmeg, if you'd prefer.
