Instructions
Add the heavy cream, brown sugar, and cocoa powder to a large saucepan.
1 cup heavy cream,
⅔ cup brown sugar,
¼ cup Dutch processed cocoa powder
Bring to a simmer over medium-low heat, stirring regularly.
Add the chopped chocolate, and stir until melted.
6-8 ounces bittersweet baking chocolate
Bring it to a boil.
Once at a boil, stir in the butter.

Remove from heat.
Stir in vanilla extract.

Notes
Heavy cream:
It's important to use heavy cream. Using half-and-half will give you thinner, runnier hot fudge.
Brown sugar:
Light brown sugar or dark brown sugar will work.
Dutch processed cocoa powder:
Dutch processed cocoa powder is less acidic and give you a smoother hot fudge sauce than unsweetened cocoa powder.
Bittersweet baking chocolate:
Use 6 ounces for thinner sauce or 8 ounces for thicker hot fudge.
Butter:
I use salted butter.
Serving:
A serving is approximately 2 tablespoons of hot fudge.
