Microwave on high in 30 second intervals until amber in color. It should take about 3 minutes and should reach 300F-310F, but timing may vary depending on your microwave.
Carefully take the bowl out of the microwave and stir in the baking soda. This will cause the mixture to foam and bubble up.
1 ½ teaspoons baking soda
Quickly pour the mixture into the prepared jelly roll pan, spreading it out evenly.
Place it on a cooling rack to cool for at least 30 minutes.
Once cool and set, use your hands to break up the peanut brittle.
Notes
Peanuts: The salt helps to balance out the sweetness of the brittle. I don’t recommend using unsalted nuts, but you can use unsalted nuts if you prefer. The brittle will just have more of a sweet, flat flavor without the salt.
You can also use a different type of nut, like almonds or cashews.
Salted butter: You can use unsalted butter if you prefer.
