Add the beef and cook, breaking up the meat with a spoon, until browned and cooked through, about 6-8 minutes.
1 pound lean ground beef
Drain the grease.
Stir in the taco seasoning and water.
1.25 ounce package taco seasoning, ¼ cup water
Cook, stirring regularly, until the water has evaporated, about 2-3 minutes.
Stir in the black beans and salsa.
15 ounce can black beans, 1 cup chunky tomato salsa
Cook, stirring regularly, until heated through, about 2-3 minutes.
Remove from heat.
Add the tortillas in an even layer to a large rimmed baking sheet.
12 ounce package tortilla chips
Spoon the ground beef mixture evenly over the tortilla chips.
Sprinkle the cheese over the top.
1 ½ cups shredded Cheddar Jack cheese
Bake for about 12-14 minutes, or until the cheese has melted.
Serve topped with your favorite toppings like salsa, guacamole, and sour cream.
Notes
Ground beef: I use either 88% or 90% lean ground beef. You could use ground turkey or ground chicken. If you use ground chicken or ground turkey, you may want to add additional seasoning.
Taco seasoning: You can use packaged taco seasoning or make your own. For lower sodium, use a reduced sodium taco seasoning.
Black beans: Another type of bean, like pinto beans, can be used.
