Preheat oven to 375° F and line a baking sheet with parchment paper or a silicone baking mat.
In a large bowl, mix together the flour, Greek yogurt, and eggs with a spatula, making sure all the flour is incorporated. You will be left with a sticky dough.
Turn the dough onto a heavily floured surface (you can use all-purpose for this). The dough will be very sticky, so also coat your hands in flour and knead the dough until you are left with a smooth ball.
Separate the ball of dough in half then each half into quarters.
Roll each piece of dough in your palm until a smooth ball forms.
Poke your thumb into the centers to hollow it out.
Place each shaped bagel on the prepared baking sheet then either lightly coat with oil or an egg wash (recipe in notes below).
Top with your favorite bagel toppings or leave plain. It’s up to you!
Bake for 20-25 minutes, or until bagels are golden brown.
Let bagels cool, and then enjoy toasted or just as is!
Notes
Flour: It's important to use self-rising flour because it contains baking powder and salt.
Greek yogurt: Plain, nonfat Greek yogurt works well. However, you could also use 2% or whole milk Greek yogurt.
Egg wash: To make a simple egg wash, stir together 1 large egg and 1 tablespoon milk. Brush this mixture on the bagels in step 7 before baking.
