Add the semisweet chocolate chips and butterscotch chips in a medium, microwave-safe bowl.
Microwave for 30 seconds. Stir.
Continue microwaving in 15-second intervals and then stirring until the chips are completely melted.
Add the chow mein noodles to a large bowl.
Pour the melted chocolate mixture over the chow mein noodles, and toss to coat.
Scoop out 2 tablespoon-sized scoops of the chow mein mixture and place on a piece of parchment paper or wax paper.
Gently shape the chow mein mixture into a nest with a hollow in the center.
Place the candy eggs, if using, in the hollow in the center.
Notes
Semisweet chocolate chips: I like to use semisweet chocolate chips because they’re not too sweet. If you’d like the cookies to be on the sweeter side, you can use milk chocolate chips. If you’d like them to be less sweet, you can use dark chocolate chips or bittersweet chocolate chips.
