Bird’s nest cookies are fun and festive Easter treats! This recipe is a bit different than my bird’s nest cookie recipe that’s made with peanut butter and cornflakes. These bird’s nest cookies are made with just 3 simple ingredients: chocolate chips, butterscotch chips, and chow mein noodles.
The cookies are also really quick and simple to make! Since they don’t need to bake, you can make them in about 10 minutes.
This recipe is also really kid-friendly; the cookies are such a quick and easy treat that kids can help make them. So, this recipe is a great way to get in the kitchen and spend some time together as a family!
Ingredient notes
- Semisweet chocolate chips: I like to use semisweet chocolate chips because they’re not too sweet. If you’d like the cookies to be on the sweeter side, you can use milk chocolate chips. If you’d like them to be less sweet, you can use dark chocolate chips or bittersweet chocolate chips.
- Butterscotch chips: I haven’t tried omitting the butterscotch chips, but the taste isn’t very noticeable in the cookies.
- Chow mein noodles: If you’re looking for a bird’s nest recipe made with cornflakes or frosted flakes, you can find that version here.
- Mini candy eggs: The candy eggs are optional. I used Cadbury mini eggs in the photos.
How to make bird’s nest cookies
Step 1: Add the semisweet chocolate chips and butterscotch chips in a medium, microwave-safe bowl.
Step 2: Microwave for 30 seconds. Stir. Continue microwaving in 15-second intervals and then stirring until the chips are completely melted.
Step 3: Add the chow mein noodles to a large bowl.
Step 4: Pour the melted chocolate mixture over the chow mein noodles, and toss to coat.
Step 5: Scoop out 2 tablespoon-sized scoops of the chow mein mixture and place on a piece of parchment paper or wax paper.
Step 6: Gently shape the chow mein mixture into a nest with a hollow in the center.
Step 7: Place the candy eggs, if using, in the hollow in the center.
Recipe Tips!
- Chips: I used Great Value chocolate chips and butterscotch chips to make this recipe.
- Chocolate: I like to microwave my chocolate chips about 90% of the way and then stir until completely melted to avoid overheating the chocolate.
- The cookies need to firm up on a surface like parchment paper, wax paper, or a silicone baking mat so that the cookies are easy to remove once set.
Storage
Store any leftover bird’s nest cookies in an airtight container. They will keep for 2-3 days at room temperature or up to 5 days when stored in the refrigerator.
