Bird's nest cookies are an easy, 4-ingredient, no-bake cookie recipe made with frosted flakes (corn flakes), peanut butter, and chocolate!

They're the festive, chocolate treat version of my butterscotch cornflake cookies that are fun for kids or kids at heart.

    Ingredient notes

    Bird's nest ingredients in bowls.

Cereal: You can use cornflakes if you want a less sweet cookie.

Chocolate chips: Feel free to use another type of chocolate chip (like milk chocolate chips) if you prefer. If you'd like to make the version with butterscotch chips, you can find the butterscotch cookie recipe here.

Peanut butter: Use regular peanut butter, not natural.

Easter candy: I use mini eggs because they're candy coated chocolate eggs. Other candies that work well are candy coated chocolate candy like M&M's or even jelly beans.

How to make bird's nest cookies

    Melted chocolate in a saucepan.

Step 1: Melt the chocolate chips and peanut butter together in a large saucepan over lowest heat, stirring regularly.

Step 2: Add cereal to a large bowl.

Step 3: Pour the melted mixture over the cereal.

Step 4: Stir to coat the cereal in chocolate.

Step 5: Drop 2 tablespoon scoops of the cereal onto parchment paper (or wax paper or a silicone baking mat).

Top tip>> You can create a little indentation for the candy eggs to sit in by gently making a thumbprint or pressing a small measuring spoon into the center of the cookie.

    Step 6: Chill until firm.

Step 7: Place 2-3 mini eggs on top just before serving.

    Storage

These cookies are best stored in an airtight container in the fridge. They will keep for up to 4 days.
