14ouncecan kidney beansdrained and rinsed
14ouncecan pinto beansdrained and rinsed
1bag of Fritos
grated sharp cheddar cheesesour cream, lettuce, or any other desired toppings
Instructions
Brown ground beef and onion in a large skillet over medium-high heat.
1 ½ pounds lean ground beef, 1 cup finely chopped white onion
Drain ground beef, and add garlic to ground beef and onion. Cook for 1-2 minutes.

Crock Pot
Add browned ground beef mixture to 5 qt or larger crockpot with tomato sauce, tomatoes, Rotel, salt, oregano, cumin, chili powder, Tabasco, and beans. Stir to combine.
15 ounce can tomato sauce, 15 ounce can diced tomatoes, 10 ounce can Ro-tel, ½ teaspoon salt, 1 teaspoon ground oregano, 1 tablespoon ground cumin, 1-2 tablespoon chili powder, 1 tablespoon chipotle Tabasco sauce, 14 ounce can kidney beans, 14 ounce can pinto beans
Cover and cook on low for 6-8 hours or high for 3-4 hours before serving stir.
Stove
Add tomato sauce, Rotel, salt, oregano, cumin, chili powder, Tabasco, and beans to the browned ground beef. Stir to combine.
Cover and let simmer, stirring occasionally, for at least 1 hour.
I like to top my chili with the Fritos so that they stay crunchy, but you can top Fritos with chili. Add any other desired toppings, and enjoy!

Notes
Ground beef: You can use ground turkey. However, I recommend increasing the seasonings a little if using ground turkey as it has less flavor than ground beef.
Tomatoes: If you can't find Ro-Tel, any brand of diced tomatoes with green chiles will work.
Chili powder: I like to use ancho chili powder. It's a little more milder and smokier than regular chile powder.
Tabasco sauce: Or regular Tabasco sauce, if you prefer. Though the chipotle adds a nice smokiness to the chili.
Beans: Feel free to use your favorite type of beans.
