Instructions
In a large bowl combine your flour, salt, baking powder, baking soda, ground ginger, cinnamon, cloves, allspice, and salt. Whisk until combined.
1 ¾ cups all purpose flour,
½ teaspoon kosher salt,
2 teaspoons baking powder,
1 teaspoon baking soda,
2 teaspoons ground ginger,
2 teaspoons cinnamon,
½ teaspoon ground cloves,
1 teaspoon allspice
In a separate medium bowl combine your oil, brown sugar, granulated sugar, eggs, molasses, and milk. Whisk until just combined.
3 tablespoons neutral oil,
¼ cup brown sugar,
¼ cup granulated sugar,
2 large eggs,
⅓ cup molasses,
¾ cup milk
Add your dry ingredients into the wet ingredients. Whisk until just combined, do not overmix.
Allow your batter to sit at room temperature for 5 minutes, while you preheat your waffle maker.
Ladle your batter into your waffle maker and cook according to your machine directions.
Serve with your favorite toppings.
Notes
Spices:
Feel free to adjust the amount and type of spices according to your tastes.
Oil:
Any neutral oil, like canola or olive oil, will work.
Brown sugar:
Light brown sugar or dark brown sugar are ok.
Molasses:
I don't recommend using blackstrap molasses as it can be bitter.
Milk:
Whole milk will give you richer waffles, but any type of milk, including nondairy milk, will work.
