Preheat the oven to 325 F. Prepare baking sheets by lining them with parchment paper. Set aside.
In the bowl of a stand mixer fitted with the paddle attachment, add sugar and butter. Beat until light and fluffy.
1 cup granulated sugar, ¾ cup salted butter
Add honey, egg, and vanilla. Beat again until well combined.
¼ cup honey, 1 large egg, 1 teaspoon vanilla extract
Add flour, baking soda, and salt. Beat until just combined.
2 ¼ cups all purpose flour, 2 teaspoons baking soda, ½ teaspoon kosher salt
Using 1 ½ tablespoon cookie scoop, scoop out balls of cookie dough.
Roll each ball in the sugar.
¼ cup granulated sugar
Place on the baking sheets, leaving about 2 inches between each cookie. Lightly flatten the top with your hands.
Bake for about 10-15 minutes, or just until lightly golden brown but still look a little underbaked. Sprinkle flaky sea salt on top of the cookies. Let cool completely on the baking sheet.
Notes
Butter: If using unsalted butter, increase the salt to 1 teaspoon.
Honey: The honey will provide a lot of flavor for the cookies, so choose honey with flavor that you enjoy.
Kosher salt: If you don't have kosher salt or sea salt, use half the amount of table salt.
Spices: Feel free to add warm spices, like cinnamon or nutmeg, to the cookies.
