Honey Cookies are soft and chewy in the center with lightly crisp edges and a delicate honey flavor. Made in one bowl with no chilling required, they’re ready in less than 30 minutes.

If you’re looking for a cookie that’s a little different from the usual chocolate chip or sugar cookie, these honey cookies are a great place to start. They have a light honey flavor, soft, chewy centers, and lightly crisp edges that make them simple but irresistable.
One of my favorite things about this recipe is how easy it is to make. The dough comes together in one bowl, doesn’t need to chill, and you’ll have warm homemade cookies in less than 30 minutes.

Ingredient notes and substitutions
- Butter: If using unsalted butter, increase the salt to 1 teaspoon.
- Honey: The honey will provide moisture and a lot of flavor for the cookies, so choose honey with flavor that you enjoy.
- Kosher salt: If you don’t have kosher salt or sea salt, use half the amount of table salt.
How to make honey cookies
Here you’ll find instructions and step-by-step photos showing how to make this recipe. The full recipe, including ingredients, is given below.
Step 1: Preheat the oven to 325 F. Prepare cookie sheets by lining them with parchment paper.

Step 2: In the bowl of a stand mixer fitted with the paddle attachment, add sugar and butter. Beat until light and fluffy.
Step 3: Add honey, egg, and vanilla. Beat again until well combined.

Step 4: Add dry ingredients (flour, baking soda, and salt) to the wet ingredients, and stir in until just combined.
Step 5: Using 1 ½ tablespoon cookie scoop, scoop out balls of cookie dough.
Step 6: Roll each ball in the sugar.

Step 7: Place on the baking sheets, leaving about 2 inches between each cookie. Lightly flatten the top with your hands.
Step 8: Bake about 10-15 minutes, or just until edges of the cookies are light golden brown but still look a little underbaked.
Step 9: Sprinkle flaky sea salt on top of the cookies. Let cool completely on the baking sheet.

Recipe Tips!
- Measure the flour carefully: Too much flour can make the cookies dry.
- Don’t overmix the dough: Mix just until everything is combined.
- Bake until the edges are lightly golden: The centers should look soft and slightly underbaked. They will continue to set as the cookies cool.
- Slightly underbake: To get soft and chewy cookies, the centers should look soft and slightly underbaked.
- Let the cookies cool on the baking sheet for a few minutes: This helps them finish setting without overbaking.
- Use a good-quality honey: Since honey is the star flavor, a flavorful honey makes a difference.
- Spices: Feel free to add warm spices, like cinnamon or nutmeg, to the cookies.

Storage
Store any leftover cookies in an airtight container at room temperature. The cookies will keep for about 3 days when properly stored.
