In a large bowl, stir together oats, water, milk, brown sugar, and maple flavor.
1 cup steel cut oats, 2 ¼ cups water, 12 ounce can evaporated skim milk, ¼ cup brown sugar, ½ teaspoon maple flavor
Pour into the prepared slow cooker.
Cover, and cook on low for 6-8 hours.
To serve, top with additional brown sugar, real maple syrup, and chopped pecans.
Notes
Oats: It's important to use steel cut oats in this recipe so that they don't break down too much while cooking.
Evaporated milk: I use evaporated milk in this oatmeal because it can stand up to the cooking time without curdling. Regular milk can curdle in the slow cooker, so I don't recommend that in this recipe.
Brown sugar: Light or dark brown sugar will work. Feel free to adjust the amount to your liking.
