Instructions
Preheat oven to 350 F. Grease 36 mini muffin cups with nonstick cooking spray.
In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
2 cups all-purpose flour,
2 teaspoons baking powder,
½ teaspoon salt
In a separate large bowl, whisk together sugar, creamer, buttermilk, and vegetable oil until well-combined.
½ cup granulated sugar,
1 cup frosted sugar cookie flavored creamer,
¼ cup buttermilk,
¼ cup vegetable oil
Whisk in egg and vanilla.
1 large egg,
½ teaspoon vanilla extract
Add flour mixture, and whisk in until just combined.
Divide the batter evenly among the prepared muffin cups.
Bake for 10-15 minutes, or until muffins spring back when lightly touched.
Let them cool in pan until room temperature.
Once the donut muffins have cooled, stir together the powdered sugar and creamer until well-combined.
¾ cup powdered sugar,
2-3 tablespoons frosted sugar cookie flavored creamer
Dip the tops of the cooled muffins in icing.
Top with sprinkles.

Notes
Creamer:
I use frosted sugar cookie creamer. You can use your favorite flavor, but using a different flavor will change the overall flavor of the donut holes.
Buttermilk:
If you don't have buttermilk, you can make a
homemade buttermilk substitute
.
Oil:
Or a similar neutral oil.
