    Haystack cookies are easy and delicious no bake cookies! These butterscotch haystacks take just 4 ingredients and less than 15 minutes to make.

    Haystack cookies are easy and delicious no bake treats! These butterscotch haystacks take just 4 ingredients and less than 15 minutes to make.

    They're a great quick no bake cookie to make with kids, and the no bake haystack cookies are as delicious as they are easy to make.

    What you'll need to make haystack cookies

    • Peanuts: You can use unsalted, lightly salted, or salted roasted peanuts.
    • Butterscotch chips: White chocolate chips or semisweet chocolate chips can be used in place of part of the butterscotch chips.
    • Peanut butter: It's important to use regular, not natural, creamy peanut butter.
    • Chow mein noodles: You'll need crunchy chow mein noodles, like La Choy chow mein noodles.

    How to make haystack cookies

    Step 1: Line 2 baking sheets with silicone baking mats, wax paper, or parchment paper. Set aside.

    Step 2: Roughly chop peanuts. Set aside.

    Step 3: Add butterscotch chips and peanut butter to a (microwave-safe) large bowl.
    Microwave for 30 seconds. Stir.

    Step 4: Continue microwaving in 15-second intervals, stirring after each interval, until the butterscotch/peanut butter mixture is completely melted. Stir until well-combined.

    Step 5: Add the chopped peanuts and the chow mein noodles. Fold the nuts and noodles are coated and everything is well-combined.

    Step 6: Scoop 2 heaping tablespoon portions of the mixture onto the baking sheets, about 20 per sheet.

    Step 7: Let the cookies set up at room temperature for about 30 minutes or 20 minutes in the refrigerator.

    Recipe FAQs

    Can I freeze haystack cookies?

    You can! The cookies can be placed in a freezer-safe resealable container and frozen for up to 6 months.

    Can I use a different type of chip?

    You can use semisweet chocolate chips or white chocolate chips in place of part of the butterscotch chips.

    Can I add other mix-ins to the cookies?

    Absolutely! It's easy to change up the flavor and make different variations of the recipe. Some haystack recipes call for mini marshmallows. Feel free to add raisins, sprinkles, cashews, walnuts, or any other desired add-ins.

    Storage

    The cookies are best stored in an airtight container in the refrigerator. The cookies will keep for up to 5 days when properly stored in the fridge.

      I don't use a microwave oven
      How can I adapt this? Also, can I substitute anything else for the chow mein noodles?

        Hi - You could try using a double boiler instead. Something neutral and crunchy, like broken stick pretzels, might work. If you use pretzels, you may want to use unsalted nuts. Hope that helps!
