This chicken avocado salad and homemade cilantro lime dressing take just minutes to make! The salad is a great way to turn leftover roast or grilled chicken into a new meal.
The recipe is also really flexible, and there are substitution and variation ideas below.
Ingredients and substitutions
- Green leaf lettuce: Green leaf lettuce works well in salads. Other ideas are romaine lettuce, spring mix, or a spinach/spring mix blend.
- Cooked chicken breast: This salad is a great way to use up leftover grilled or roast chicken. Rotisserie chicken also works well.
- Corn: Sweet or regular canned corn will work.
- Avocado: The avocado adds richness and creaminess to the salad.
- Red onion: If you aren’t a fan of red onion, shallot makes a milder substitute.
- Cilantro: The fresh cilantro gives the dressing most of its flavor.
- Olive oil: Extra virgin or light work well.
- Sour cream or Greek yogurt: The sour cream or (plain) Greek yogurt add some creaminess to help balance out the cilantro.
- Fresh lime juice: Fresh lime juice (about 1 lime’s worth) adds a bright, fresh flavor to the dressing. Fresh lime juice will give you nicer flavor than bottled lime juice.

How to make avocado chicken salad
Step 1: Add the lettuce, shredded chicken, corn, avocado, and red onion to a large serving bowl.
Step 2: To make the dressing, add the dressing ingredients to a blender or food processor. Blend until smooth.
Step 3: Add some of the dressing to the salad ingredients and toss to combine.
Serve with additional dressing, if desired.
Variations
This salad recipe is pretty flexible, and there are a number of different additions you can make. Here are some ideas.
- Cooked and crumbled bacon
- Sliced hard-boiled eggs
- Halved grape tomatoes
- Hearts of palm
- Cheese
- Black beans
Serving suggestions
The salad can be served with whole grain crackers or French bread. It also makes a great filling for lettuce wraps, tortilla wraps, or pitas.

- 2 tablespoons fresh lime juice
- ¼ teaspoon salt
- Pepper to taste
Instructions
