Maple banana muffins are a fall twist on classic banana muffins! Made in one bowl with simple pantry ingredients, they’re ready in less than 30 minutes.

Banana muffins and banana bread are always a good choice when you’ve got ripe bananas on hand, but adding maple syrup takes them to a whole new level. The sweet bananas pair perfectly with the rich maple syrup, giving these muffins a subtle fall-inspired twist that’s delicious all year long.
This recipe is as simple as it gets: one bowl, pantry-staple ingredients, and less than 30 minutes from start to finish. The muffins bake up soft and moist with just the right amount of sweetness.
They’re perfect for breakfast, snacks, or tucking into lunchboxes. You can even double the batch and freeze extras for easy grab-and-go mornings.
Ingredient notes and substitutions
- Bananas: I like to use overripe bananas that are part yellow, part brown spots.
- Butter: If using unsalted butter, increase the salt to 1/2 teaspoon.
- Maple syrup: I recommend using pure maple syrup. For stronger maple flavor, you can add up to 1 teaspoon of maple extract along with the vanilla extract.

Step 1: Preheat the oven to 375F. Grease or line a standard 12 cup muffin tin. Set aside.

Step 2: Add the mashed banana and melted butter to a large mixing bowl, and mix until combined.
Step 3: Stir in the egg, maple syrup, and vanilla extract until combined.

Step 4: Add the all purpose flour, cinnamon, baking soda and salt. Stir in just until combined.
Step 5: Divide the batter between the prepared muffin tins, filling about 2/3 full.
Step 6: Bake for about 15-25 minutes or until a toothpick can be inserted and comes out clean.
Step 7: Let the muffins cool in the pan for about 5 minutes before moving to a wire cooling rack to cool.

Recipe Tips!
- Room temperature ingredients: It’s important to let ingredients get to room temperature. Cold ingredients will cause the butter to resolidify, and you’ll get chunks of butter in your batter.
- Topping: For a bit if crunch, you can add 2 tablespoons of chopped pecans or walnuts or 1 tablespoon of coarse sugar to the batter in the pan before baking.
- Freezing: To freeze the muffins, let them cool to room temperature on a wire cooling rack. Wrap the muffins tightly in plastic wrap and place in a freezer-safe container. Freeze for up to 1 month.

Storage
Store any leftover muffins in an airtight container at room temperature. They will keep for 2-3 days when properly stored.
