This kielbasa zucchini and potatoes skillet is a really tasty dinner that’s made with just a few ingredients. The skillet recipe is easy, budget-friendly, and delicious!
It takes just a few minutes to prep and is ready in less than 30 minutes. Since it uses seasonal vegetables, it’s also budget friendly.
Best of all, the kielbasa zucchini and potatoes skillet is packed with flavor! It’s also really easy to adjust to suit your tastes.
Ingredients
- Olive oil
- Red potatoes: I used larger red potatoes. If using small red potatoes, you may want to add additional potatoes.
- Butter: I used salted butter. The butter adds additional flavor.
- Zucchini: There’s no need to peel the zucchini before use.
- Garlic
- No salt garlic herb seasoning
- Kielbasa: Feel free to use any type of kielbasa that you like.
- Salt and pepper
- Parmesan cheese: The parmesan cheese is optional.
How to make skillet kielbasa zucchini and potatoes

Step 1: In a large skillet, heat olive oil over medium high heat. Add the cubed potatoes.
Cook, stirring regularly, for 10-15 minutes. Remove from skillet.

Step 2: Add the butter to the now-empty skillet. Stir in zucchini and sauté until tender crisp.
Step 3: Add garlic, and stir in. Remove from skillet.

Step 4: Add smoked sausage, and cook, stirring regularly, until heated through, about 3 minutes.
Step 5: Return the potatoes and zucchini mixture to the skillet and stir in.
Step 6: Season with salt and pepper. Serve sprinkled with grated parmesan cheese, if using.

I used Kinder’s No Salt Garlic and Herb Seasoning. However, Mrs. Dash also has a similar seasoning blend.
Sure! Sauteed onion or mushrooms would be great in this recipe.
Absolutely! Feel free to use olive oil in place of the butter and omit the parmesan cheese.
Sure! Use andouille sausage and look for a spicy seasoning blend or add red pepper flakes along with the garlic herb seasoning blend.

Storage
Any leftovers should be stored in an airtight container in the refrigerator. The leftovers will keep for up to 3 days when properly stored in the fridge.

Can I use frozen cubed potatoes instead

Hi! I haven’t tried frozen cubed potatoes in this recipe, but I think they would work just fine! You will probably need to adjust the timing for the potatoes, but otherwise I think they’ll work just fine. =)
