The cookie takes just minutes to make, and it makes a great dessert for weeknights or special occasions. Get ready to grab a spoon and dig in!
What’s a pizookie?
A pizookie is a cookie pizza. It’s a large cookie that’s cooked in a cast-iron skillet.
Several restaurants, like BJ’s Restaurant & Brewhouse and Oregano’s, have them on their menu.
What you’ll need to make a pizookie
- Butter: I use salted butter. If using unsalted butter, increase the salt to 3/4 teaspoon.
- Brown sugar: Light or dark brown sugar will work. Dark brown sugar will give you richer flavor.
- Granulated sugar
- Large eggs
- Vanilla extract
- All-purpose flour: It’s important to properly measure the flour. Weigh it for the most accurate measurements. You can also sift/stir it to break it up, lightly spoon it into the measuring cup, and level.
- Baking soda
- Salt
- Semisweet chocolate chips: Feel free to vary the type of chip. You can use milk chocolate chips, bittersweet chocolate chips, or even white chocolate chips.
How to make a pizookie
Step 1: Preheat oven to 350°F.
Step 2: Add butter to a 12-inch cast-iron skillet and melt the butter while the oven preheats.
Step 3: Meanwhile, in a large bowl, stir together brown sugar and granulated sugar.
Step 4: When butter is almost melted, carefully remove skillet from oven and whisk butter until completely melted.
Step 5: Pour the butter over the sugar mixture and whisk until well-combined.
Tip >> Don’t wipe the skillet out. The little bit of butter left in the skillet will help keep the cookie from sticking and will help give the edges their buttery crispiness.
Let the butter mixture rest for 5 minutes.
Step 6: Mix in eggs and vanilla.
Step 7: Add flour, baking soda, and salt, and stir in just until combined.
Step 8: Stir chocolate chips into the cookie dough just until combined.
Step 9: Spread mixture into buttered skillet.
Step 10: Bake until toothpick inserted in center comes out with a few moist crumbs and the top is golden brown, about 30-40 minutes.
Step 11: Serve warm.
Variations
This recipe is a great base that can easily be switched up. Here are some ideas:
- Chips: Use white chocolate chips, peanut butter chips, dark chocolate chips, milk chocolate chips, chocolate chunks, or confetti chips.
- M&Ms: Swap out part or all of the chocolate chips for M&Ms.
- Nuts: Add chopped pecans or walnuts along with the chocolate chips.
Serving suggestions
Pizookies are usually served warm and are topped with scoops of vanilla ice cream. Feel free to drizzle caramel sauce, hot fudge sauce, or both over the ice cream.
Recipe FAQs
You can! You can use an oven-safe skillet in place of the cast iron skillet.
For this recipe, you won’t brown the butter. Browning the butter concentrates the butter and reduces it. If you brown the butter, you may end up with drier dough.
Storage
Cover the pizookie tightly and store at room temperature. It will keep for 1-2 days.
