    Pumpkin French Toast

    Pumpkin French toast is a simple fall breakfast recipe that's made with just eight ingredients and takes less than 10 minutes to make!

    Pumpkin French toast is a delicious fall breakfast that takes just minutes to make! This easy recipe combines a pumpkin spice egg batter and slices of thick bread for a simple but tasty French toast that's sure to please!

    Ingredients

    • Large eggs
    • Milk - any milk, from skim to whole milk, will work. However, whole milk will make for richer French toast. Non dairy milk, like almond milk, will also work.
    • Pumpkin puree - Be sure to use pumpkin puree, not pumpkin pie mix.
    • Brown sugar - Light or dark brown sugar will work. Dark brown sugar will give the French toast richer flavor.
    • Vanilla extract
    • Pumpkin pie spice - If you can't find pumpkin pie spice, you can make your own with this easy recipe.
    • Ground cinnamon - There is cinnamon in pumpkin pie spice, but this extra teaspoon ground cinnamon helps to bump up the spice flavor.
    • Bread - Thick-sliced bread, like Texas toast, works well. Other thick-sliced sandwich bread, like Artesano breads, also work well.

    How to make pumpkin French toast

    Heat large skillet or griddle over medium-low heat.

    In a large bowl, whisk eggs, milk, pumpkin, brown sugar, vanilla, pumpkin pie spice, and cinnamon together until well-combined.

    Pour the pumpkin egg mixture into a large shallow dish. A rimmed baking dish works well.

    Add the bread to the dish and turn to coat both sides.

    Add butter to the skillet, melt, and swirl to coat. Place the coated bread in the skillet.

    Cook for about 3 minutes, or until golden brown. Flip the bread and continue cooking until the other side is also golden brown, about 2-3 minutes.

    Repeat with remaining bread.

    What type of bread is best for French toast?

    For this type of French toast, thicker bread works better. The pumpkin makes the batter a bit heavier, and thicker bread holds up better.

    For example, Texas toast works well in this recipe. Other thick-sliced sandwich breads, like Artesano breads, also work well. Challah or French bread can also be used in this recipe.

    Tips

    • Serving: The French toast is best served and eaten warm.
    • Leftovers: Leftovers can be stored in an airtight container for up to 4 days.
    • Freezing: Pumpkin French toast freezes well. To freeze the leftovers, let the cooked French toast slices cool.
      I like to place the French toast on a wire cooling rack to let it cool. This helps to prevent it from getting soggy. Once cooled, the slices can be placed in a single layer in a freezer-safe container. If placing more than one layer in the container, put a piece of wax paper in between the layers.

    Serving suggestions

    Pumpkin French toast has a bit of sweetness from both the pumpkin puree and from the brown sugar. If you like mildly sweet breakfasts, you may find that you like the French toast as-is.

    It's also delicious spread with butter and topped with maple syrup, dusted with powdered sugar, or served with homemade caramel syrup.
