Wassail is a classic drink! This cozy drink is made from apple cider blended with orange juice and warm spices.
It takes just a few minutes to put together, and it is the perfect way to warm up on chilly days!

Ingredient notes and substitutions
- Apple cider: I like to use fresh, refrigerated apple cider when it’s available. You could also use shelf-stable cider.
- Spices: Feel free to vary the spices according to your tastes.
- Apple: I like to use a cooking apple so that it holds together better.
How to make cider wassail

Step 1: In a medium pot over medium-high heat, cook cider and juice.

Step 2: Add ground cinnamon, allspice, and ground cloves; whisk until combined.

Step 3: Add cinnamon sticks, star anise, and orange and apple slices.
Step 4: Bring mixture to a boil. Reduce temperature to medium-low and allow to simmer for 45 minutes.
Step 5: Before serving, remove cinnamon sticks and star anise with a slotted spoon.
Step 6: Serve or transfer to a crock pot to keep warm.

Recipe Tips!
- Keep warm: To keep the cider wassail warm, you can carefully transfer it to a crock pot and hold it on keep warm for an hour or two.
- Variations: Feel free to change up the spices to suit your tastes or add a touch of honey or brown sugar to sweeten it further.

Storage
Store any leftover wassail in an airtight container in the refrigerator. It will keep for up to 4 days when properly stored in the fridge.
To reheat, you can either warm on low in a crock pot until heated through or warm over low on the stove.
