These easy roast potatoes are one of those side dishes my kids ask for regularly. They’re simple, made with just 4 ingredients, and only take about 10 minutes of hands-on time before the oven does the rest.
The best part is how easy they are to customize. Keep them simple with salt and pepper, or change up the seasonings to match whatever you’re serving for dinner.

Ingredient notes and substitutions
- Potatoes: You can use similar baking potatoes, like red potatoes, Yukon gold potatoes, small potatoes like creamer potatoes, in place of the Russet potatoes.
- Seasonings: Feel free to adjust the salt and seasoning to your liking.
How to make roast potatoes

Step 1: Preheat the oven to 400F.

Step 2: Add the potato cubes to a rimmed sheet pan in a single layer. You could also add the potatoes to a bowl first if you prefer. There’s no need to boil the potatoes before roasting.
Step 3: Toss the potato cubes with olive oil.
Step 4: Sprinkle the garlic powder, salt, pepper, and herbs over the potatoes. Toss again to coat.

Step 5: Bake for about 30-40 minutes, or until crisp and browned.

Recipe Tips!
- Serving suggestions: I like to serve the roast potatoes with everything from burgers to grilled chicken dishes like chimichurri chicken to sloppy Joes.
- Variations: I like to change up the flavor to go with my main dish. For instance, if I’m serving Greek turkey burgers, I’ll use Greek seasoning. You can also sprinkle with fresh herbs like parsley or chives after baking.
