How to make Mississippi mud cake

Step 1: Preheat oven to 350 F. Grease a cookie sheet (I use a 15×11-inch rimmed cookie sheet/jelly roll pan) with edges. Set aside.

Step 2: Melt butter in a large saucepan.
Step 3: Once butter has melted, stir in water and cocoa powder; bring to a boil.
Step 4: Once at a boil, add buttermilk, and stir to combine. Remove pan from heat.
Step 5: Add the sour cream, eggs, and vanilla, and stir until well-combined.
Step 6: Stir in sugar, flour, baking soda, and salt until just combined.

Step 7: Pour into the prepared pan, and bake for 15-20 minutes.

Step 8: Sprinkle marshmallows over the cake and return to the oven for about 3 minutes.
Step 9: While the cake is baking, prepare the icing. For the icing, combine the butter, cocoa, and buttermilk. Bring to a boil.

Step 10: Remove from heat, and add the powdered sugar, vanilla. Stir to combine.
Step 11: Stir pecans into icing, if using.
Step 12: Pour icing over hot cake and spread evenly over cake.
Step 13: Let the cake sit for at least 30 minutes for the frosting to set up.
