Easy no bake cookies are always in season! This no bake cookie recipe is perfect for warmer weather, but it tastes so good that you’ll want to make it year round.
The cookies are made with just 5 simple pantry-staple ingredients. These easy peanut butter cornflake cookies are made without corn syrup, but if you’d like to use corn syrup, you’ll find the directions for doing so under the recipe tips.
The cookies are similar to butterscotch cornflake cookies; they are sometimes called cornflake candy or peanut butter cornflake candy, but no matter what you call them, they’re always delicious!
Ingredient notes and substitutions
- Cornflakes: Cornflakes make a great base for this recipe because they provide great crunch and hold up well to the peanut butter coating.
- Granulated sugar: The sugar helps to add sweetness to the cookies, and the melted sugar also helps the cornflakes to stick together.
- Honey: Honey helps to hold the cookies together and helps to add chewiness to the cookies.
- Creamy peanut butter: Regular creamy peanut butter works well. I don’t recommend using natural peanut butter.
- Vanilla extract: The vanilla gives the cookies a bit of extra flavor.
How to make peanut butter cornflake cookies
Step 1: Line a baking sheet with parchment paper. Set it aside.
Step 2: Pour cornflakes in a large heat-proof bowl. Set it aside.
Step 3: Add sugar, honey, peanut butter, and vanilla extract to a saucepan.
Step 4: Set saucepan over medium heat. Whisk continuously so the sugar doesn’t burn, for about 3 to 5 minutes. Once the mixture starts bubbling, remove from the heat.
Step 5: Pour the peanut butter mixture over the cornflakes.
Step 6: Use a rubber spatula to carefully fold the peanut butter into the cornflakes, making sure you don’t crush them.
Step 7: Once the mixture is evenly distributed, work quickly to scoop the cornflakes onto the prepared baking sheet in 2-inch sized cookies. I like to use an ice cream or cookie scoop to get uniform cookies.
Step 8: Let cookies sit on the baking sheet until they have cooled and the mixture has hardened.
Recipe Tips!
- Other recipes call for corn syrup instead of honey. You can easily substitute ½ cup corn syrup for the honey.
- Feel free to add a pinch or two of salt for sweet and salty cookies.
- Make sure to work quickly so the mixture doesn’t harden in the bowl before you form it into the cookies.
Storage
Store any leftover peanut butter cornflake cookies in a single layer in an airtight container. If storing more than one layer of cookies, place a sheet of wax paper or parchment paper in between the layers.
The cookies will keep for about 2-3 days at room temperature or about 5 days in the refrigerator.
