Scotcheroos are peanut butter cereal treats that are topped with a sweet chocolate/butterscotch topping. They are popular, no-bake cereal treats that are always a hit.

Growing up in the Midwest, scotcheroos were always a big hit. There always seemed to be a tray of scotcheroos at every potluck, school event, or gathering.
If you haven’t tried scotcheroos, let me share these tasty cereal treats with you. Scotcheroos are peanut butter rice krispie treats that are spread with a chocolate/butterscotch melted topping.
They’re similar to my butterscotch rice krispies, but this recipe gets some extra flavor from the peanut butter in it. And the treats are as tasty as they are easy to make!
They are made from 6 simple ingredients, and they only take about 30 minutes to make. They’re a perfect treat to bring for any occasion!

Ingredient notes and substitutions
- Peanut butter: I don’t recommend using natural peanut butter in this recipe. Regular creamy peanut butter works well.
- Corn syrup: Corn syrup helps to make the bars chewy and keep the sugar from crystalizing.
- Cereal: Scotcheroos are traditionally made with Rice Krispie cereal, but there’s no reason why you couldn’t use a different type of cereal if you prefer.
How to make scotcheroos
Here you’ll find step-by-step photos showing how to make this recipe. The full recipe, including instructions, is given below.
Step 1: Grease a 13×9-inch baking pan with nonstick cooking spray. Set aside.

Step 2: Stir peanut butter, sugar, and corn syrup together in large saucepan.
Step 3: Cook over medium-low heat, stirring frequently, until melted. Remove from heat. Add cereal; stir until thoroughly coated.

Step 4: Press onto bottom of prepared baking pan.
Step 5: Microwave butterscotch morsels and semi-sweet chocolate morsels in large microwave-safe bowl for 1 minute.
Stir. If necessary, microwave at additional 10- to 15-second intervals, stirring just until morsels are melted.

Step 6: Spread over cereal mixture.
Step 7: Chill for 15- 20 minutes or until topping is firm. Cut into bars.

Recipe Tips!
- Melting: It’s important to melt the peanut butter mixture slowly to avoid scotching. Stoves can vary, so you may find that low heat works better with your stove.
- Pressing into pan: Gently press the cereal mixture into the pan. Pressing it down to firmly can give you dense treats.
- Salty/sweet: Feel free to sprinkle a little flaky salt over the scotcheroos. While not traditional, the bars are pretty sweet, and a sprinkle of salt helps to balance them out.

Storage
Store any leftover scotcheroos in an airtight container in the refrigerator. They will keep for up to 5 days when properly stored in the fridge.
