Brown butter Rice Krispies treats are the leveled up version of Rice Krispies treats. This easy recipe makes thick, soft and gooey treats with 5 ingredients in just 20 minutes.
Rice Krispies treats are classic, no-bake treats. This brown butter version takes those soft and gooey treats up a notch or two.
This recipe is a variation on the classic recipe. It’s made with browned butter, extra marshmallows, and a splash of vanilla, all of which make these brown butter Rice Krispies treats extra delicious!
The treats are also really easy to make. It takes just 5 simple ingredients and about 20 minutes to make them. So you can whip up a batch whenever a craving strikes!
Ingredient notes and substitutions
- Butter: If you like more salty/sweet brown butter flavor, use salted butter in place of the unsalted butter.
- Marshmallows: You could use large marshmallows to melt, but I recommend using mini marshmallows to stir in.
- Vanilla extract: Feel free to adjust the vanilla extract to your tastes. You could also use vanilla bean paste.
- Cereal: You could use a different flavor of Rice Krispies, like Cocoa Krispies, to change up the flavor.
- Sea salt: It’s important to use sea salt or finishing salt. Table salt is saltier and may make your treats too salty.
How to make brown butter Rice Krispies treats

Step 1: Line a 9×9 baking pan with parchment paper or grease the pan with nonstick spray. Set aside.
Step 2: Add your butter to a large pot over medium-low heat.
Step 3: Cook, stirring occasionally, until the milk solids in the butter start to turn golden brown.
Step 4: Turn the heat to low.
Step 5: Mix in 6 cups of the marshmallows and keep stirring until all the marshmallows have melted.
Step 6: Remove from heat.
Step 7: Stir in the vanilla extract.
Step 8: Add in the Rice Krispies and the remaining marshmallows, and stir just until the cereal is well coated.
Step 9: Transfer the cereal mixture to the prepared pan.
Step 10: Spray a rubber spatula with nonstick spray and gently press the cereal mixture into an even layer.
Step 11: Sprinkle the salt on top.
Step 12: Let the Krispie treats cool to room temperature to set up.
Step 13: Remove the treats from the pan and cut into squares.
Recipe Tips!
- Doubling the recipe: The recipe doubles well in a 9×13-inch pan.
- Thinner treats: The treats will be quite thick. If you want thinner treats, use a 9×13-inch pan instead.
- Mix-ins: You can add in about 1/4 cup of mix-ins like chocolate chips or nuts with the marshmallows in step 8.
Storage
Store any leftover Rice Krispies treats in an airtight container at room temperature. The treats will keep for up to 4 days when properly stored at room temperature, but they are best eaten within the first 2-3 days.
Depending on how humid it is where you live, you may choose to cover them loosely or tightly with plastic wrap.
