There’s something undeniably comforting about a warm fruit cobbler, and this Blackberry Cobbler is one of the easiest (and most satisfying) summer desserts you can make. Fresh blackberries bubble up beneath a golden, cake-like topping that has just the right amount of sweetness.
Whether you serve it warm with a scoop of ice cream or enjoy it as a decadent breakfast the next day, this cobbler is a classic for a reason. It’s rustic, simple, and incredibly good.

Recipe Tips!
- Berries: You can use a combination of blackberries and blueberries if you prefer.
- Do not stir: It’s important not to stir the boiling water in. The boiling water will sink as it bakes, but you’ll end up with a really runny batter that doesn’t bake properly if you try to stir it in.
- Serving suggestions: I like to serve the cobbler topped with either a scoop of vanilla ice cream or a dollop of homemade whipped cream.

Storage
Store any leftover blackberry cobbler in an airtight container at room temperature. It will keep for 2-3 days when properly stored.

Ingredients
Batter
- 1 ½ cups sifted all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk whole or 2% work best
- 1 teaspoon vanilla extract
- 1/4 cup salted butter
- 1 cup granulated sugar
- 1 teaspoon grated lemon or orange zest
Topping
- 4 cups fresh blackberries
- 3/4 cup granulated sugar
- 1/4 cup salted butter cut into ½-inch pieces
- 1 cup boiling water
Instructions
- Preheat the oven to 350F. Grease a 9×13-inch baking pan. Set aside.
- In a medium bowl, whisk together the flour, baking powder, and salt.1 ½ cups sifted all-purpose flour, 2 teaspoons baking powder, 1/2 teaspoon salt
- Add the milk and vanilla extract; whisk in until combined.1 cup milk, 1 teaspoon vanilla extract
- In a medium bowl, add ¼ cup butter, 1 cup granulated sugar, and zest together.1 teaspoon grated lemon or orange zest
- Add the flour mixture, and mix until combined.
- Pour the batter into a baking pan.
- Sprinkle the blackberries over the batter.4 cups fresh blackberries
- Sprinkle the ¾ cup sugar over the blackberries.
- Dot the butter over the blackberries.1/4 cup salted butter
- Pour the boiling water over the top. Do not stir.1 cup boiling water
- Bake for about 40-50 minutes, or until golden brown.
- Serve warm.
