They’re a fun and festive treat that you can enjoy while watching Christmas movies, and they also make an easy addition for Christmas cookie trays.
Ingredient notes and substitutions
- Salted butter: I prefer to use salted butter because the little bit of salt in the butter helps to balance out the sweetness in the treats. You can also use unsalted butter and add a pinch or two of salt.
- Vanilla extract: Adds a rich, sweet flavor that complements the marshmallows and cereal, enhancing the overall taste. Feel free to use another flavor of extract or flavoring, like peppermint, if you prefer.
- Mini marshmallows: Regular marshmallows will also work in this recipe.
- Red candy hearts: You can find candy hearts online, in the grocery store, or in craft store baking sections.
How to make Grinch Rice Krispies treats

Step 1: Grease a 9 x 13-inch baking pan with non-stick cooking spray. Then, line it with parchment paper, leaving some overhang on the sides for easy removal.
Step 2: Melt the butter in a large pot over low heat.
Step 3: Add vanilla extract and 4 cups of mini marshmallows to the pot. Stir until completely melted and smooth. Remove the pot from heat.
Step 4: Gradually add Rice Krispies cereal, stirring until well-coated with the melted marshmallow mixture.
Step 5: Using a piece of wax paper or your lightly greased hands, gently press the mixture evenly into the prepared baking pan.
Step 6: Allow the mixture to cool and set completely for about 30 minutes.
Step 7: Once set, lift the Rice Krispie treats out of the pan using the parchment paper overhang.
Step 8: Cut the treats into squares or rectangles of your desired size.
Step 9: Melt the neon green candy melts according to the package instructions, either in the microwave or using a double boiler.
Step 10: Place the cut Rice Krispie treats on a sheet of parchment paper.
Step 11: Use a spoon or a piping bag to drizzle the melted neon green candy over the treats.
Step 12: While the candy melts are still wet, place a red candy heart on each Rice Krispie treat.
Step 13: Allow the candy melts to set completely before serving or packaging the treats.
Recipe Tips!
- Green Rice Krispies: For green rice krispies, add a few drops of green food coloring to the marshmallow mixture before adding the Rice Krispies.
- Green sugar: You can sprinkle some green sparkling sugar over the candy melts before they set.
Storage
Place the treats in an airtight container and store them at room temperature for up to 3 days. If you are stacking them, place a piece of wax or parchment paper between layers to prevent sticking.
