    Pimento Cheese Dip

    Ain't no party like a theme party! There's something about dressing up and enjoying a few hours of fun in another time that just really makes a party.

    One of my favorite themes is the 1960's, or 1965 in this case. I missed out on the real 1960s, but it seems like it was such an interesting time! The music was great, the clothes were fun, and the food was influenced by so many different sources.

    One of the big crazes at the time was Pimento Cheese Dip. A party just wouldn't have been a party without it, some Chex Mix, and a bowl of onion soup dip.

    One of the great things about Pimento Cheese Dip is how easy it is to make. It's a super simple, stir together dip that is really more like a spread. You can mix it up, and put it in the fridge until you're ready to serve it, which is awesome because then you actually get to enjoy time at the party.

    Ingredients

    • 4 ounces cream cheese softened (lite ok)
    • ½ cup mayo lite ok
    • 8 ounces sharp cheddar cheese shredded
    • ¼ cup chopped pimentos
    • Salt and pepper

    Instructions

    • Beat together cream cheese and mayo until well-combined.
    • Mix in cheese until combined.
    • Add pimentos and salt and pepper. Stir until just combined.
    • Cover, and chill until ready to serve, or serve immediately.
