This slow cooker pineapple chipotle beef is a simple, hands-off dinner that comes together with just 10 minutes of prep. Once everything is in the slow cooker, it cooks low and slow into tender, easy-to-shred beef with rich, well-developed flavor.
The combination of sweet pineapple and smoky chipotle gives it a good amount of heat, but it still has a nice bit of sweetness, savoriness, and smokiness. This beef is fantastic in tacos, quesadillas, nachos, and in just about any other dish.

Step 1: Add the chile, sauce, juice, maple syrup, garlic, tomato paste, and liquid smoke to a food processor; pulse until smooth.
Step 2: Pour sauce into slow cooker insert.

Step 3: Add roast, fat side up, to slow cooker.
Step 4: Sprinkle roast with salt.
Step 5: Cover, and cook on high for 6 hours.

Step 6: Shred meat with 2 forks, and return to sauce. Continue cooking for 30 minutes.

Recipe Tips!
- Use the right cut of beef: Chuck roast works best because it becomes tender and easy to shred after slow cooking.
- Don’t skip the cooking time: Cooking low and slow helps break down the meat and develop flavor.
- Adjust the spice level: Use fewer chipotle peppers for a milder flavor or add more for extra heat.
- Shred and return to the sauce: Letting the beef soak in the sauce after shredding adds more flavor.
- To freeze: Pour sauce into freezer-safe container. Add roast and seal. Freeze for up to three months.

Can you please explain 1 tablespoon chile + 1 sauce from can chipotle chiles in adobo.. does that mean 1 chili from the can and all the sauce from it?

What kind of chile did you use? I know it says a tbsp of sauce but what kind of chili? Is it canned?
