How to make grilled chicken sandwiches
Here you’ll find instructions and step-by-step photos showing how to make this recipe. The full recipe, including ingredients, is given below.

Step 1: Place each chicken breast between two sheets of parchment paper and lightly pound the chicken breasts to about ½-inch thickness.
Step 1: In a glass or non-reactive container, stir together the pickle juice, garlic powder, onion powder, and paprika.

Step 3: Add chicken, cover, and refrigerate at least 4 hours, or up to 8 hours.
Step 4: Remove the chicken from the marinade and discard the marinade.
Step 5: Grill the chicken for about 4-5 minutes per side, or until the chicken reaches an internal temperature of 165F.
Step 6: Serve the chicken on buns with desired condiments and toppings.
Recipe Tips!
- Pounding the chicken breast: This helps to even out the chicken so that it cooks faster and more evenly. I’ve made the chicken sandwiches without doing this. The chicken just takes longer to cook, and you’ll have to watch them more closely as they won’t cook evenly.
- Don’t marinate too long: Pickle juice helps tenderize the chicken, but too much time can affect the texture.
- Measuring the internal temperature: You’ll want the chicken to reach 165 degree F by checking it with a meat thermometer.
- Topping ideas and variations: The sandwiches can be served with a number of toppings like crispy bacon, lettuce, tomato, onion, mayonnaise, mustard, cheese like cheddar or Swiss. Using different types of buns is also a great way to change up the flavor, and buns like brioche bun, potato bun, onion buns, or sesame buns all work well.
Serving suggestions
Grilled chicken sandwiches go well with a number of sides. Here are some ideas:

Storage
Store any leftover chicken in an airtight container in the refrigerator. The chicken will keep for up to 4 days when properly stored in the fridge.
