    Simple Brioche French Toast Recipe

    This simple brioche French toast recipe is rich and delicious! It's made with thick-sliced brioche bread and just a few simple ingredients to create a luscious egg custard. This French toast makes a decadent breakfast or brunch.

    Brioche French toast is a simple but delicious breakfast that's perfect for weekend brunch or holiday breakfasts!

    Why use brioche bread to make French toast?

    Brioche bread is a rich, slightly sweet bread that's texture and flavor are well-suited to making French toast. It's often served in thick slices, and those thick slices hold up well to the egg mixture.

    Brioche bread can be found in the bakery section of most grocery stores.

    Ingredients and substitutions

    • Whole milk - Whole milk helps to give you rich, creamy French toast.
    • Heavy cream - You can use additional whole milk or half-and-half in place of the cream.
    • Large egg yolks - The egg yolks help to make the French toast rich.
    • Granulated sugar - A little bit of sugar helps the French toast flavor and helps it to caramelize.
    • Vanilla extract
    • Ground cinnamon - Feel free to adjust the amount to taste.
    • Salt - A couple of pinches of salt help to balance out the flavor in the egg mixture.
    • Loaf of brioche bread - I've listed some substitutions for the brioche bread below.

    How to make brioche French toast

    Heat a large skillet or griddle over medium heat. 

    French toast egg mixture in a white dish.

    Add milk, cream, egg yolks, sugar, vanilla extract, salt, and ground cinnamon to a large, shallow dish or bowl. Whisk together until well-combined.

    Place a couple slices of bread in the egg mixture, gently pressing it into the egg mixture. Flip the bread and gently press the other side into the egg mixture.

    Grease the skillet with butter. Add the soaked pieces of brioche to the skillet. Cook for about 3-4 minutes or until golden brown. 

    Flip the pieces and continue cooking for about 1-2 minutes, or until golden brown. Repeat the process with the remaining brioche.

    Serve warm.

    Tips

    • Don't leave the bread - The bread just needs a quick dip. Leaving it in the egg mixture too long can cause the bread to get soggy.
    • Work in Batches -  Don't overcrowd the skillet.
    • Golden brown and cooked through - If the slices are browning too quickly but not cooking through, reduce to medium-low heat.
    • Double it - This recipe can easily be doubled. You can keep slices warm by places them on a baking dish in a 200F oven and tenting it with foil.
    • Add more spice - Feel free to increase the cinnamon or to add a couple of pinches of ground nutmeg to the egg mixture.

    How can I store leftover French toast?

    Let any leftover French toast cool to room temperature. Place it in an airtight container, and store in the fridge for up to 3 days.

    How to reheat?

    You can reheat the slices in the microwave or re-warm it in a buttered skillet.

    How can I freeze French toast?

    Let the cooked slices cool on a wire cooking rack. Place the cooled slices of French toast in a single layer in a freezer-safe container. Seal and freeze.

    What topping go well with this?

    This French toast is delicious served with toppings like with maple syrup, powdered sugar, fresh berries like blueberries and strawberries, or whipped cream.

    What can I substitute for brioche bread?

    Challah makes a great substitute. Other breads that aren't quite like brioche but will make good French toast are Texas toast, and thick-sliced sandwich breads like Artisano bread.

    Can I make this dairy-free?

    You can! Simply substitute the dairy-free alternative of your choice for the milk and cream. Dairy-free heavy cream and dairy-free milk would work well.
